Nanna’s Rice Custard (Gluten Free – Dairy Free)

This recipe has been a family favourite for at least the last four generations. It’s fantastic warm on a cold winter night or cold on a hot summer night.
With the dried fruit, it is even a great, quick, relatively health breakfast that is guaranteed to give you a full stomach and high energy level through to lunch.
Ingredients:
3 eggs
3 cups soy milk (my favourite is Vitasoy Lush Vanilla or Chocolate ®)
½ cup of raw sugar
1 tablespoon vanilla
1 cup dried fruit (any mixture) Add an additional ½ cup of milk
2 cups of cooked rice
Sprinkle of nutmeg or cinnamon (or chocolate for something special)
Method:
In a large bowl, beat the eggs and milk together well. Add the sugar and beat again. Add the other ingredients. Place into a bowl for cooking. Sprinkle with topping of your choice.
Cooking:
Microwave – on high for 20 – 25 minutes on high. Leave to stand for 10 minutes then serve.
Oven – preheat oven to 185˚ or 170˚ on a fan forced oven. Lower the temperature to about 150˚ degrees for approximately one hour.
The custard is ready when the custard wobbles slightly.
