Wheat, Egg and Dairy Free, White Chocolate Cake
This cake is a good substitute for a traditional birthday cake.
125 grams Dairy Free White Chocolate - Melted (this chocolate is very sweet)
1/4 cup Soy Milk (this can vary depending on the moistness of the other ingredients)
1/2 cup melted dairy free spread - Soy Margarine works well
1/2 cup raw sugar or other sugar of choice
3/4 cup of steamed pumpkin or choko* or combination
1 1/2 cups of wheat free or gluten free flour ( I use Oat flour)
Method:
Step 1
Melt the chocolate, spread, and sugar together.
Step 2
Combine the steamed mashed pumpkin or choko with the flour.
Step 3
Add the melted mixture and mix well
Step 4
Add the soy milk a little at a time until you get the batter to the consistency of a cake batter. If the mixture is too moist add flour a pinch at a time.
Step 5
Place in a pre-heated (180 degrees or equivalent) oven. Bake for approximately 30 - 45 minutes. The cake is ready when you insert a skewer into the cake and the skewer comes out clean.
*Note - Choko is a vegetable with no taste that is fantastic for substituting for other flavours as it takes on the flavour of the other ingredients
