Wheat Free, Egg Free, Dairy Free Pancakes.

These pancakes are light and tasty and perfect as a substitute for bread. My children and husband all enjoy them as a Sunday lunch, when they can bribe me to make them.
Ingredients
1 cup of wheat free flour. I use some oat flour (finely ground rolled oats and Organs Gluten free SR flour)
1/2 cup pureed peaches. I just blitz some tinned peaches.
1 to 1 1/4 cups of soy milk (start with one cup and be ready to add more if necessary)
Method:
Put everything into a blender and blend until smooth but not too runny. By using a blender to mix everything together it adds extra air into the mixture, so you don't need to wait like with traditional pancakes.
Cook a spoonful or so at a time in a hot pan.
Serve hot or cold with topping of your choice. We tend to use lemon and sugar, jams or ice cream toppings.
These pancakes can be used as a quick bread substitute for school lunches, work snacks etc.
Note:
To make these a savoury pancake to use in lasagna, replace the pureed peaches with pureed pumpkin.
Or try them as a savoury pancake stuffed with mince and vegetables and baked in a sauce of choice for a cannelloni similar meal.
